Wairimu Bean Chilli Con Carne
Turn your everyday Wairimu beans into something a little different. This hearty chilli con carne combines tender Cherubet Wairimu beans with spiced beef, tomatoes and peppers for a rich, comforting meal that’s perfect with rice, chapati or tortilla chips.
Method
- 1
Defrost the beans
Remove 500g of Cherubet Wairimu Beans from the freezer and allow them to defrost. Drain any excess liquid.

Brown the beef
Heat the oil in a large pot over medium-high heat. Add the minced beef and cook until browned, breaking it apart as it cooks.

Add the aromatics
Add the onion and cook for 3–4 minutes. Add the garlic, chilli and red pepper and cook for another 2 minutes.

Season
Add the cumin, smoked paprika, oregano and black pepper. Stir for about 30 seconds until fragrant.

Build the sauce
Add the chopped tomatoes and tomato paste. Cook for 5–7 minutes until the tomatoes soften and the mixture becomes rich.

Add the beans
Stir in the 500g of Cherubet Foods Wairimu Beans and beef stock. Bring to a gentle simmer.

Simmer
Cook uncovered for 15–20 minutes, stirring occasionally, until the chilli thickens and the flavours come together.

Finish and serve
Taste and adjust the seasoning. Add a squeeze of lime and fresh coriander if desired.
Serving suggestions
Serve with: rice, chapati, ugali, tortillas or tortilla chips.
