Njahi & Coconut Rice
A delicious Kenyan classic. Tender Cherubet Njahi simmered in a rich, savoury tomato sauce, paired with fragrant, creamy coconut rice. Just defrost, cook and enjoy.
Method

Defrost the njahi
Remove the 500g Cherubet Njahi from the freezer and allow it to defrost. Drain any excess liquid.

Make the sauce
Heat the oil in a large saucepan over medium heat. Add the onion and cook for 3–4 minutes until softened. Add the garlic and green pepper and cook for another 2 minutes.

Add the tomatoes
Stir in the tomatoes and tomato paste. Cook for 5–7 minutes until the tomatoes have broken down into a thick sauce.

Add the spices
Stir in the cumin, coriander, paprika and black pepper. Cook for 30 seconds until fragrant.

Add the njahi
Stir in the 500g pre-cooked Cherubet Foods Njahi. Add ½ cup water and bring to a gentle simmer. Cook for 15–20 minutes, adding more water if needed. Season with salt.

Serve
Serve with creamy coconut rice and a sprig of fresh coriander.
Notes from our kitchen
If you want the coconut flavour to come through even more, replace some of the water with an additional 100ml coconut milk. This makes the rice richer and pairs especially well with the earthy flavour of njahi.
