Traditional Kenyan
Mbaazi wa Nazi with Mahamri
A taste of the Kenyan coast, made easy. Cherubet pre-cooked Mbaazi simmered in creamy coconut milk and fragrant spices, served alongside soft, golden mahamri. Just defrost, cook and enjoy.
Method
- 1
Defrost the mbaazi
Remove the 500g Cherubet Mbaazi from the freezer and allow them to defrost. Drain any excess liquid.
- 2
Sauté the aromatics
Heat the oil in a large saucepan over medium heat. Add the onion and cook for 3–4 minutes until soft. Add the garlic and green chilli and cook for another minute.
- 3
Add the spices
Stir in the cumin, turmeric, coriander and black pepper. Cook for about 30 seconds until fragrant.
- 4
Add the coconut milk
Pour in the coconut milk and ½ cup of water. Stir well and bring to a gentle simmer.
- 5
Add the mbaazi
Stir in the defrosted Cherubet Foods Mbaazi. Simmer gently for 15–20 minutes, allowing the beans to absorb the coconut and spices. Stir occasionally.
- 6
Adjust the consistency
If the sauce is too thick, add a little water. If it is too thin, allow it to simmer uncovered for a few extra minutes. Season with salt to taste.
- 7
Garnish and serve
Finish with fresh coriander and serve hot alongside freshly made mahamri.
